Magnolia's Banana Pudding-mmmm

At work we tried to make our weekly team meeting more exciting by having everyone bring in a different recipe each week. One of the recipes that was brought in was Magnolia's Famous Banana Pudding. It is one of my roomie's fav desserts so the other night my we took a stab at it and I have to say it was one of the easiest and most delicious deserts I have ever made. You absolutely can not mess up this recipe-or stop eating it! I wish I had prettier pictures but unfortunately we made it then ate it. So amazing!

  • 1 (14-ounce) can sweetened condensed milk
  • 1 1/2 cups ice cold water
  • 1 (3.4-ounce) package instant vanilla pudding mix (preferably Jell-O brand)
  • 3 cups heavy cream
  • 1 (12-ounce) box Nabisco Nilla Wafers (no substitutions!)
  • 4 cups sliced ripe bananas
  1. In a small bowl, on the medium speed of an electric mixer, beat together the sweetened condensed milk and water until well combined, about 1 minute. Add the pudding mix and beat well, about 2 minutes more. Cover and refrigerate for 3-4 hours or overnight, before continuing. It is very important to allow the proper amount of time for the pudding mixture to set.
  2. In a large bowl, on the medium speed of an electric mixer, whip the heavy cream until stiff peaks form. Gently fold the pudding mixture into the whipped cream until well blended and no streaks of pudding remain.
  3. To assemble the dessert, select a large, wide bowl (preferably glass) with a 4-5-quart capacity. Arrange one-third of the wafers to cover the bottom of the bowl, overlapping if necessary, then one-third of the bananas and one-third of the pudding. Repeat the layering twice more, garnishing with additional wafers or wafer crumbs on the top layer of the pudding. Cover tightly with plastic wrap and allow to chill in the refrigerator for 4 hours - or up to 8 hours, but no longer! - before serving.

I found 4 of the same sweatshirts at a sample sale so I brought 1 home to each roommate. We call them our team 2E sweatshirts.

Book Club is Back!

Sorry I have been gone so long... It has been difficult to get back into the groove since moving back to the city after surgery. With work, PT and bringing back my social life blogging was put on the back burner but now I am back! Would anyone like to enjoy reading Firefly Lane with me? The book was suggested to me by my roommate and I have just started.  Pretty excited...

Some other books that I would like to display in my apt :)

Keep Warm, Look Cool

I have never been good at acheiving a cool look that keeps me warm and doesn't look dorky (aka mismatching gloves, hat that doesn't exactly work, puffy coat-yea thats me walking down the street so don't make fun I'm embarrassed enough). This is extremely frustrating to me when I pass girls wearing similar to the below pics of my fav blogger girls-can I just be you girls?? PLEASEEE? I am dedicated to changing my winter outerwear look-stat! Apparently, though it seems like I need a rotation of coats and a  wardrobe full of warm and cozy, furry accessories.

Oh Hanneli your gorg

Back in Newww York

It has officially been four weeks since I had foot surgery and I was just told that I will be needing physical therapy 2 times a week for another month. I am so NOT happy about this-I thought I would be back in regular shoes ready to go in time for the holidays! I am finally back in NYC and it feels really good to be back at my apartment, aside from the mess.  I am definitely trying to get in the holiday spirit, with Christmas (I love it even though I am Jewish), my 1 (1.5) yr anniversary with my boyfriend, and NYE. There are a few things on my mind.

1) I can not wait to start exercising again. I have been out of the yoga studio for a month now and my muscles feel completely stiff. I have been stretching during the week but it is just not the same. I never though I would crave the 105 degree heat from the Bikram studio.

2) During my time away from the office I was still stressed out. Even though I was on the couch, I spent most of my time scouring fashion web sites trying to figure out how to start this blog and thinking about work. It has been a ton of fun but I do not feel I truly relaxed.

3) I need some social activity. Besides hanging out with my boyfriend, my parents and a few friends the couch and computer have been my entertainment. I have only read 1 book which is rare for me and only watched a few movies. I can not wait until I can walk around the city again!

4) I appreciate my health! Having one bum foot has made me realize how lucky I am to be healthy.
